Bresaola
Bresaola domestic. An air cured meet, made from the beef loin. it is extremely lean. Breasaola has a ruby red color. It also has a sweet, aromatic flevor. It is used primarly as an antipasto. A very popular recipe is to serve bresaola thiny slices and dribbled with extra vergin olive oil. Shredded or shaved with Pamigiano Reggiano is then spread over the top.
