This semisoft, uncooked cheese from the region around Bergamo gains flavour and an accompanying odor at the cheese ages. The crust is pinkinsh-gray and the paste is white, supple and fruity. Taleggio is an excellent dessert cheese that goes very well with a robust wine. |
