| Caciocavallo Podolico is a semi hard caciocavallo (meaning "cheese on horseback") made from the milk of a rare cow's breed "Podolica", typical from Irpinia in the Campania Region. They only eat what they find in the field, when they are out during the day time.
The Caciocavallo Cheese made from this milk are left to age in caves (grotte di Tufo) from 6 to2 years. After the aging process the cheese is covered in mold leaving the rind hard and shiny.
The cheese is high in protein and it has an intense golf color, with small holes in it; It has strong and persistent aroma and a defined sharp taste.
Its ingredients are: raw cows Podolica milk, lamb and sheep's rennet, salt and water. |
