| Stracchino. A fresh, cow's milk cheese from Italy's Lombardy region. Stracchino contains about 50% percent milk fat. Its flavour is mild and delicate. Smooth and moist, it ha a fresh, clean acidity. The cheese should be ripen for no longer than 10 days and as such eaten as quickly as possible. |
