| Pecorino Crotonese is an artisanal sheep's milk cheese aged in wicker baskets. It is produced in two varieties, fresh and aged. When fresh, the cheese is creamy in texture with a more pronounced flavor than a younger table cheese. When aged, it is firmer in texture and has a sharp flavor with an earthy finish. It is a creative alternative to other grating cheeses. Crotonese is produced between the months of January and June when sheep's milk is the best and most abundant. |
