This blue cheese is produced using mainly cow milk and a small portion of goat milk. It's typical from Piedmont, a region in the North West of Italy. A cheese is called blue when its dough is characterized by natural moulds. In order to let these moulds develop, one has to make some holes on the cheese and put it to season in natural caves with a high degree of humidity.
