JdC has decided to call this product Carpaccio of smoked swordfish instead of smoked swordfish for the following reason: Unlike the latter the carpaccio of swordfish is slightly dried. This, in order to obtain a more elegant and tender product. During the marinating stage, various Pot-herbs and spices are used. Especially the star-like anise which gives a remarkable flavor to the product. Only Mediterranean swordfish is selected. Its meat is delicate and firm, especially that of the younger specimen. We recommend serving the swordfish thinly sliced and seasoned with lemon and oil or by adding orange juice.
