Setaro Elicoidali is a ridged tubular pasta made by Pastificio Setaro in Torre Annunziata, near Naples, Italy. The name refers to its helix-like form: unlike the straight ridges of classic rigatoni, Elicoidali has curved ridges that spiral around the tube. Those grooves, combined with its hollow center, give sauces plenty of places to cling and collect.
How to Use Setaro Elicoidali
Elicoidali works especially well with meat ragù, sausage, rich tomato sauces, vegetables, creamy sauces, and baked pasta dishes. Its hollow center captures sauce and ingredients while the spiral ridges hold even more on the exterior, making it an excellent shape for robust preparations.
